- 1 tablespoon coconut oil
- 1/2 cup canola oil
- 1 bag of spinach
- 2 garlic cloves
- 1 red bell pepper
- 1 sweet potato
- 1 cup of arugula
- A handful of blueberries
Chop the spinach, garlic, bell peppers and sweet potato. Sate the bell pepper and garlic with a pinch of salt then add the spinach and let it cook for 10 minutes. At the same time, put the sweet potato pieces in hot canola oil so you will have everything ready at the same time. When ready, put them in a plate, add the arugula and blueberries and enjoy!
Looks good even though I never imagined spinach and heaven could share the same sentence 😛
