Not your everyday lentil soup

It was crazy over the past 2 weeks with work, friends and life in general and I had no time to bond with my TiVo so poor thing felt very neglected but a tiny medical procedure brought us back together again this weekend. I realized, the fastest way to recovery is relaxing in front of the TV and catching up with my TV shows and movies, THANKS to my TiVo. 😉

One more thing that helps with a quick recovery is a hearty meal like lentil soup, easy to make and digest. Here is how I make it:

  • 1 cup of lentils, soaked over night
  • 1/4 Lb ground turkey
  • 1/2 cup chopped bell pepper
  • 1 cup finely chopped kale
  • 1 medium size potato, chopped
  • 1 medium size onion finely chopped
  • 1/2 can roasted tomatoes
  • 2 or 3 cups water (depends on how watery you like your soup)
  • 2 garlic cloves, finely chopped
  • 1 tablespoon coconut oil
  • 2 tablespoon cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • some salt

In a big pot heat the coconut oil and add the ground turkey, onions and garlic with half of your spices and salt until light brown. Add the bell peppers, kale and potatoes and stir until tender. Add the lentils, tomatoes, water and the rest of spices and salt and let it cook for about 30 to 40 minutes. Easy breezy!
