Back to my kitchen, I thought it would be nice to have something veggie for dinner, so wiped up something with greens and beans, and added some kale and mango salad on the side. Easy breezy!
- 1 cup of yellow lentils
- ½ a cup of chopped kale
- 2 and ½ cups of puree edamame soy beans
- ½ a cup of chopped onions
- ½ a cup chopped oyster mushrooms
- 4 eggs
- 1 tablespoon sea salt
- 1 tablespoon turmeric
- 1 tablespoon black pepper
- 1 teaspoon red pepper
Mixed all the ingredients, oiled an oven safe pan, put the mix in it and threw it in a 350 degree preheated oven for 30 minutes.
