Dear Halibut!

I love seafood especially when it’s homemade. Today, I was working from home and decided to make some since I had a nice fresh piece of halibut in my fridge. The problem was time. I had less than one hour to prepare my lunch and eat it. Of course, there’s no reason to settle for blah just because I’m short on time and want something healthy and quick. Is there? 😉

 Halibut

  • 1 or 2 Halibut fillets
  • 1 Chinese eggplant, chopped
  • 1 zucchini, chopped
  • 1 red bell paper, chopped
  • 1 cup of mushrooms
  • 2 garlic gloves
  • 1/2 a cup chopped onion
  • 1 teaspoon black pepper
  • 1 teaspoon dry or fresh rosemary
  • 1 teaspoon sea salt
  • 1 teaspoon red pepper powder
  • 1 teaspoon turmeric 
  • 1/2 teaspoon saffron 
  • 2 tablespoons coconut oil
  • 2/3 cup of water
  1. Lightly sauté all the vegetables with the coconut oil, black pepper, rosemary, sea salt , turmeric and half of the red pepper powder
  2. Add the chopped garlic and onions in about 5 minutes in and sauté until golden
  3. Add the water, cover your pot or pan and let them cook for about 15 minutes
  4. Rub the saffron and remaining of the red pepper powder on the Halibut pieces
  5. Heat up the remaining coconut oil in another pan on low temperature and sauté the fish, both sides, for about 10 minutes 
  6. Let the fish cool off a little before serving
